While Florida isn't known for snow, it does happen. And, when it does, Ken uses the #snowday to cook lima beans. Nothing is as endemic to winter time #southerncooking as a pot of lima beans with #cathead #biscuits and chopped #greenonion on the side.

KEN'S SOUTHERN LIMA BEANS {QUICK COOK STYLE}

1 lb. Dry Large Lima Beans, Sorted
Water
6 oz. Ham Pieces, Cut or Ham Hocks or Jowl Pieces or Bacon Pieces
Salt, to Taste

1/4 tsp. Onion Powder, Optional

Making sure to pick out any objectionable beans, place into a large pot and cover with two inches of water. Bring the pot to a rolling boil and let set two minutes before cutting off the heat, covering, and letting the beans soak for one hour in the boiling water. After an hour wait, stain off the water from the beans. Add ham, salt, pepper, and optional onion powder to taste. Use less salt than you think you will need to avoid over salting. Pour in fresh water into the pot, covering about two inches from the top of the beans. Bring to a boil and reduce to a simmer before lidding. Let cook for one to two hours. Different cooks like different doneness levels of the lima beans. It is generally accepted that the lima beans are done when at least a quarter of the beans are empty shells. Most cooks prefer anywhere from a half to three-quarters of the beans to be cooked to empty hulls. This thickens the beans and makes them more like a thick bean soup than a traditional boiled vegetable. Serve in a bowl like you would a thick soup. Generally speaking, chopped green onions and large "cathead" biscuits (usually made with buttermilk) are served on the side for people to eat with their lima beans.
