Cook With Me | Low Carb Meal Ideas |
I'm sharing two low-carb, keto friendly, healthy meal ideas today. One is great for breakfast and the other is great for lunch or dinner!
🥚🥑 EGG-VOCADO BREAKFAST RECIPE
Ingredients (for 2 servings):
-2 avocados
-4 eggs
-salt/pepper/seasoning of your choice
Directions:
Preheat oven to 350 degrees
Slice avocados in half lengthwise, scooping out some of the flesh to create a well.
Place avocados on baking sheet
Crack one full egg into each half of avocado
Bake for 10-15 minutes or until egg is cooked to your preference.
Season with salt/pepper and enjoy!
🍗🥗 CURRY CHICKEN SALAD RECIPE
Ingredients (2 servings):
8 oz Cooked Chopped Chicken
1 Avocado, sliced
1/2 Red Bell Pepper, chopped
1/2 cup Red Onion, chopped
1 cup Red Grapes, halved
1/4 cup Walnuts or Pecans
1/2 cup Non-Dairy Mayonnaise
2 tsp Curry Powder
Salt and Pepper to taste
Directions:
In large mixing bowl, mix the mayo and curry powder thoroughly.
Next add all the other ingredients and stir until blended.
Serve chilled, on a bed of lettuce, by itself or as a sandwich.
