You will forget about the sausage, just cook the meat in this simple way
Cut 2 carrots into rings.
Cut one head of garlic into narrow strips.
Pork neck 1 kg.
Make 3-4 cuts along the grain.
Pierce the pockets with a knife between the cuts.
Put the carrots and garlic in the cuts.
Mix spices to taste: basil, red and black pepper, smoked paprika, rosemary, cumin (about 1.5 tsp)
Salt to taste (I have 1.5 tsp) Olive oil 1 tbsp
Mustard 1.5-2 tsp
Transfer the meat to the foil and brush with the spice mixture.
Wrap the meat tightly in foil.
Refrigerate for at least 2 hours, preferably overnight.
Bake in the oven at 180 C for 1.5 hours.
Remove the foil and send to brown for another 20 minutes.
Cool the cooked pork, put in the refrigerator for 2 hours. Cut and serve.
