This is the first of the coppas’ videos. It covers from shrink-bag to cure. I discuss how to identify the coppa and how to cut it. Why some might want to cut them for different reasons. In this I don’t really give out recipes as you can experiment but I do follow one of the prescriptive means in the USDA manual.
