Chorizo con papas y huevos

We are back again this week for an easy yet yummy breakfast dish, Chorizo con papas y huevos made easy. This one speaks to my childhood. I remember when mama would make these all the time. These are those types of meals that you can feed a whole tribe on a budget. It was either; chorizo con huevo, chorizo con papa y huevo, or huevo con salchicha. These were star breakfast meals among so many in our kitchen as a kid. I hope you enjoy this one enough to whip it up in the kitchen.

INGREDIENTS:
• Chorizo - any kind (pork, beef, or soy)
• Onion and Garlic - finely chopped - 3 tbs of onion / 1 clove of garlic
• Potatoes - diced small
• 2-4 Eggs
• Salt & Pepper to taste
