Arugula and Avocado Salad

This arugula and avocado salad with a cumin lime vinaigrette will become a repeat summer favorite. It's a simple easy addition to any dinner especially with fajitas or skirt steak.

- 3 cups Arugula and Spinach Mix
- 2 Avocados
- 3 Roma Tomatoes
- 1/2 Red Onion
- 1/2 Bunch Cilantro
- 2 Limes
- 1/4 cup Olive Oil
- 1 tsp Cumin
- 1/2 tsp garlic powder
- 1/4 tsp Salt
- Pepper
- Combine arugula and spinach mix with diced tomatoes in a large mixing bowl. Thinly slice red onion. Add diced avocado and red onion in with arugula and tomatoes. Rough chop cilantro and sprinkle on top.

- Toast cumin and garlic powder over low heat in a fry pan for about a minute or until fragrant.

- Juice limes

- Combine olive oil, lime juice, cumin, garlic powder, salt, and pepper in a spouted measuring up. Whisk until well combined.

- When ready to serve, pour vinaigrette over arugula mixture. Toss to coat well. Enjoy!
