Easy Delicious Eggplant Caponata

A Sicillian Favorite if mine. Eggplant Caponata served on a slice of crusty bread is so delicious.
Ingredients:
1 Eggplant
1cup Onions
3 small cloves of Garlic
2 Celery stalks
12 oz. Plum tomato's
Olive oil
Tbls. Capers
Hand full of Sicilian green olives
Tsp. Sugar
Tbls. Red wine vinegar
Salt & pepper to taste
Red chilis (optional)
