疫情期間,為了節省外帶頻率與外送費用,有些人可能會選擇一次外帶較多食物,之後再慢慢加熱食用,吃隔夜菜的頻率增加,隔夜菜如何保存成為重點。曾經有人因為習慣吃隔夜菜而導致敗血症,也有婦女因長期將剩菜加熱後再食用的習慣,就診後發現罹患大腸癌;呼籲大家少吃隔夜菜。為什麼剩菜盡量不要吃?哪些菜最好不要隔夜食用?萬不得已又該怎麼辦呢?

為何吃隔夜菜可能致癌?專家解釋:因隔夜菜、尤其菠菜等深綠色葉菜類,當中的硝酸鹽經細菌分解後,會產生亞硝酸鹽,且8小時內亞硝酸鹽的濃度就會變高。

亞硝酸鹽吃下肚後,若與肉、蛋等含胺食物結合,便有可能生成致癌物亞硝胺。不只不健康,更會增加罹患大腸癌、食道癌、胃癌的風險。
▲隔夜菜一定要加熱再吃,最多只放一天
台灣臨床毒物科顏宗海醫師指出:若是要食用剩菜、隔夜菜,前一天一定要放在冰箱保存,冰箱也要維持在4℃左右,而且一定要用至少70℃高溫徹底加熱,才能殺死細菌,另外食物還是盡量在新鮮情況下吃完,剩菜也頂多隔天就要吃完,不要一再加熱。

有些家庭可能煮太多,或者剛好吃不下,又怕浪費食物,只好剩下一堆剩菜,分餐解決。但其實這樣對身體不好,建議大家準備食材時應評估份量,才能根本上避免吃隔夜菜的狀況。
