▲冷凍蔬菜保存術
1、汆燙再冷凍
汆燙1-2分鐘後去除水分再冷凍。適合食材:綠花椰菜、白花椰菜、玉米筍、秋葵、碗豆、四季豆等。
2、直接冷凍
切段、切塊後或直接冷凍。適合食材:紅蘿蔔、青椒、彩椒、辛香料等。
3、揉鹽再冷凍
切絲、切片揉鹽出水後,用清水洗淨瀝乾再冷凍。適合食材:小黃瓜、高麗菜、白菜等。
4、壓泥再冷凍
煮熟後壓成泥再冷凍。適合食材:馬鈴薯、番薯、南瓜等。
