Another EASY Supper & My Thanksgiving Routine | Chicken Parm Pasta | A Good Life Farm

I brought you into the kitchen for another quick (almost one pan) supper recipe. And while there in the kitchen, I shared some of my routine for Thanksgiving.

The recipe that this simple version was based on:

The Ingredients:

1 Tb cooking oil (I use coconut)
1/2 tsp black pepper
1/2 tsp sea salt
1 1/4 (or so) cubed chicken breasts (or thighs)
1 jar (24 oz.) your favorite marinara
3 cloves garlic, minced
2/3 c 2 Tb shredded Parmesan cheese
1 c shredded Mozzarella cheese
1 lb spiral pasta (or similar)

To begin, heat the oil in a large skillet (with a lid.)
Add in the chicken.
Sprinkle in the salt & pepper.
Cook until the chicken is opaque.
Add in the marinara and garlic. Stir.
Simmer, covered, for about 15 minutes, until the chicken is full cooked.
Meanwhile cook your pasta according to package directions.
Reduce the heat to low and stir 2/3 cup of Parmesan cheese into the chicken mixture, until it is melted in.
Add in the cooked & drained pasta, carefully mix together.
Top with the remaining Parmesan and the Mozzarella cheeses.
Cover the skillet and let it heat on low until the cheese is melted.
Enjoy!
