Cauliflower Rice - Making, Freeze Drying, and Rehydrating

Cauliflower Rice -Rehydration test starts at 8:05
Freeze drying a head of cauliflower after making it into cauliflower rice. I cut the head in half and used the food processor with the grater disc to rice the cauliflower. Next, I blanched half of it before freeze drying and left the other half raw. Lesson learned? Blanch your cauliflower before freeze drying.
