Pork and Onion

10 pounds pork loin -- or pork chop; sliced 3/8" thick
4 pounds onion -- sliced 1/4" thick
1 gallon of tomato sauce
salt and pepper

Slice the pork about 3/8" thick and onions about 1/4" thick
Quickly brown the pork on both side: does not need to be cooked through.
Cook the onion slices until they start to soften.
Layer the browned pork, onions and sauce in baking dishes and bake, covered, @350 °F for 20 to 30 minutes until pork is 145 °F. Uncover and bake 15 minutes more.
