This is the wild caught speckled trout we catch about weekly in the sound near Scranton, NC. This simple recipe surprisingly made the trout delicious. Enjoy!
Simple and low carb fried fish:
1. Blend about 3 cups of pork rinds for each filet until finely ground.
2. Saturate filets in wing sauce of choice.
3. Evenly coat filets with ground pork rinds.
4. Heat peanut oil to 350F.
5. Fry until center of meat reaches 145F, turning at least once to cook both sides.
6. Serve!
