Meal prep plant based lasagna

A big batch or your favorite lasagna is perfect for meal prepping and freezing. Using my kitchen aid pasta maker I can easily whip up some pasta for the week using some pasta for lasagna and some for chicken-less noodle soup. Both recipes I can make and freeze for later enjoyment using my food saver vacuum sealer.

*when freezing lasagna in portions I first cook the whole pan of lasagna.

Then I cool slightly go one the juices time to absorb into the pasta

Then I portion and place each portion on a wax paper lined baking tray that fits in the freezer

Once frozen enough to stay together I slide each portion into a vaccine seal bag.

Then seal and freeze !
