checking the Sweet Tater wash day 1.

I mashed 23 pounds of sweet potatoes in 10 gallons of water. the enzymes from the sweet potatoes yielded a 1.030 so I added liquid enzymes and got a 1.035. my conclusion is there is very little sugar in them and they are to be used as an adjunct for flavor. we'll see what this tastes like when it's done, it smells amazing. By the way i added 12 pounds of cane flour to bring the gravity up to 1.072.
