1/4 cup milk
2 slices white bread
butter
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
1.5 lbs ground beef
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon nutmeg

Tear bread, soak in milk. Sweat onions in butter on stove until soft. Mix bread, milk, meat, egg yolks, spices, onions. Shape meatballs. Fry until brown.
