Andrew Taylor or spud fit as he is called online switched from a diet filled with junk food to a potato only diet
From Melbourne, Australia

-Lost 117 lbs in 1 year only eating potatoes
-He eats potatoes and sweet potatoes with dried herbs and spices also with the addition of oil free sauces like sweet chili, tomato sauce, or barbecue sauce
-To make mashed potatoes he uses a bit of soy milk
-As for fluids he only drinks water and the occasional beer
-Now you might be thinking he will be lacking nutrients, but potatoes actually give a full spectrum of nutrient especially with the addition of herbs.
-Potatoes are loaded with vitamin C, A, iron, fiber, protein and contain enough healthy fat to keep the body going. With the addition of sweet potatoes then you’d get a different array of nutrients as well
-To avoid b12 deficiency he takes a supplement for that
-He’s had a few blood tests to prove all his numbers are good and in the right ranges
