INGREDIENTS :

650 grams chicken breast chunks
1 egg
1 tablespoon cornflour
1 chopped medium onion
1 chopped large red pepper
300 grams chopped & boiled broccoli
4 tablespoons chicken stock
3 tablespoons soy sauce
2 sliced spring onions
80 grams cashews
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 tablespoons vegetable oil

INSTRUCTIONS :

.in a bowl add 1 egg, 1 tablespoon cornflour
.add 1/4 teaspoon salt and mix together
.add mixture to chicken breast chunks and coat well
.add 1 tablespoon vegetable oil in frying pan on medium heat
.add chicken and cook until lightly browned and set aside
.in same pan add 1/2 tablespoon vegetable oil on medium heat
.add 1 chopped medium onion, 1 chopped large red pepper
.add 80 grams cashews and cook for 2 to 3 minutes, stir occasionally
.add cooked chicken and mix well
.add 300 grams chopped & boiled broccoli and mix well
.add 4 tablespoons chicken stock, 3 tablespoons soy sauce
.add 1/2 teaspoon ground black pepper and mix well
.cook for another 2 to 3 minutes and serve with rice
