INGREDIENTS :

600 grams cubed potatoes
7 minced garlic cloves
150 ml extra virgin olive oil
2 tablespoons red wine vinegar
1/2 teaspoon ground black pepper
1/4 teaspoon salt
Sourdough bread
fresh chopped parsley
15 grams quartered Black olives

INSTRUCTIONS :

.boil 600 grams cubed potatoes
.in frying pan add 150 ml extra virgin olive oil, 7 minced garlic cloves
.cook for a couple minutes on medium heat and set aside
.in a mixing bowl add half of boiled potatoes, half olive oil & garlic mix
.add 1 tablespoon red wine vinegar, 1/4 teaspoon ground black pepper, 1/8 salt
.mash ingredients together
.add half of boiled potatoes, half olive oil & garlic mix

.garnish with fresh chopped parsley,
15 grams quartered Black olives and serve with sourdough bread
