Preheat the griddle to medium-high heat. Place a small pot on the back corner of the griddle to preheat. 2. Add the pancetta to the griddle and sauté for about 2 minutes, tossing occasionally. Continue cooking until the pancetta is fully crisp and golden, then remove it from the griddle and set aside. 3. Dice the peach into small pieces, leaving the skin on. 4. Once the pot is heated, add the butter, brown sugar, and vanilla extract to start the peach compote. 5. Add a small amount of avocado oil to the griddle and sauté the diced peaches over medium heat for 3–4 minutes, tossing halfway through to allow the natural sugars to caramelize. 6. Transfer the sautéed peaches to the pot with the butter mixture and stir to combine. In a small bowl, mix the arrowroot or cornstarch with an equal amount of water to make a slurry, then slowly whisk it into the pot until the compote thickens. Keep warm on low heat. 7. In a medium bowl, combine the pancake mix, water, and milk, and stir until smooth. 8. Lower the griddle heat to medium-low. Melt the butter on the surface and pour small amounts of pancake batter to form mini pancakes that will act as taco shells. 9. Cook the pancakes for 2–3 minutes or until bubbles form on the surface, then flip and cook the other side until golden brown. 10. Remove the pancakes from the griddle and place them in a taco holder so they fold in half while still warm. 11. Stovetop Skillet Pizza Ingredients: 250 gr Flour 1/4 tsp Salt 1 tsp Italian Seasoning 2 tsp Baking Powder 150 ml cold Water Oil Topping: Pizza Sauce Cheddar Cheese, shredded Mozzarella Cheese, shredded 1/4 Red Onion, sliced 1 Sweet Pepper, sliced 2-3 Honey Ham Slices, diced 2 Green Onions, chopped Pour Flour, Salt, Italian Seasoning, Baking Powder on Table. Make a well and fill with Water. Use a fork and slowly work everything together. Knead long enough until the Dough comes together. Form a ball & set aside. On high heat, add 1 tbsp Oil to large Skillet. Sauté Red Onion & Sweet Pepper, season with Salt & Italian Seasoning, set aside. Press and form the Dough out to approx. 10" In same Skillet on med/high heat add a little Oil. Place Dough in Skillet and cover. Cook until golden & bubbles. Flip the Crust over. Top with Pizza Sauce, Cheddar Cheese, Onion/ Sweet Pepper, Ham and Mozzarella Cheese. Cover with Lid and cook on med heat until bottom is cooked thru & crisp. Season with oregano, paprika, and Mrs. Dash, then splash with water to steam and toss well. Cook until the vegetables are softened, about 5–8 minutes. 3. On the other side of the griddle, drizzle oil and spread evenly. Place a sheet of parchment paper on top, drizzle a little more oil, and lay the fish filets on the parchment. Season with paprika, pepper, and Mrs. Dash. 4. Cook the fish for 2–3 minutes per side, flipping carefully until cooked through. 5. In the center of the griddle, add the rice with a splash of water. Toss gently and allow it to steam until warmed. 6. Assemble the dish by layering rice first, followed by vegetables, then cod. 7. Pat the chicken thighs dry and season with Cajun seasoning, garlic powder, and black pepper. 2. Watermelon Slushy Ingredients: 4-5 cups Watermelon Chunks, frozen (best overnight) Juice of 1/2 Lemon Pinch of Salt 2 tbs Maple Syrup (more or less to your liking) 1/2 -1 cup Ice cold Water, or as needed Remove rind from Watermelon, cut in Chunks. Freeze best overnight. Blend portion of Watermelon, Lemon Juice, Salt and Maple Syrup. Add Water and blend again. Preheat the griddle on high heat and lightly coat it with avocado oil. Drizzle avocado oil over the T-bone and rub half of the onion soup mix onto both sides of the meat, saving the rest for the vegetables. 2. Place the steak face side down on the griddle and add slices of butter around it so the butter bastes and crisps the meat. Cook for about 6 minutes, adjusting the time depending on your preferred doneness. 3. On another section of the griddle set to medium-high, cook the onions and mushrooms with 3 tablespoons of butter, the remaining onion soup mix, and a drizzle of avocado oil. Stir and let them cook until browned and crisp, about 5 minutes. 4. Flip the steak, add more slices of butter around it, and cook for another 5–6 minutes or until it reaches your desired internal temperature. 5. Toss the vegetables again, then stand the steak upright on its sides to render the fat, holding each edge for 30 seconds to 1 minute. 6. Pour half of the beef broth over the vegetables and toss well. Pour the rest of the broth over the steak. 7. Place the cheese slices on the steak and cover it with a dome until the cheese melts, about 30 seconds to 1 minute. 8. This Fruit Salad is a mix of fresh Fruits, tossed with a Lime Honey Dressing. A refreshing Appetizer, Side Dish, Dessert or Picnic Item. Fruit Salad Ingredients: 2 cups Cherries 2 cups Strawberries 1-2 cups Kiwi 3 cups Watermelon (Cubes) 3 cups Cantaloupe (Pieces) 3 cups Plums 3 cups Pears (Pieces) Juice of large Lime Zest of a Lime 1-2 tsp Honey Combine Lime Juice, Zest and Honey. (add more Honey if you like it sweeter) Whisk well, set aside. (Note: Cut the Fruits in approx. the same size.) Peel and slice Kiwis. Remove Watermelon Rind and cut in Cubes. Preheat the Blackstone griddle to low heat and drizzle a little cooking oil, spreading it evenly across the surface. 2. Place the bacon on the griddle, press it down with a bacon press, and flip it often to cook evenly without burning. Remove once done and cut each slice in half. 3. Divide the sausage into two 6-ounce patties and cook them on the griddle. Flip once the first side is seared and continue cooking. 4. Crack the eggs into a bowl, whisk them with the heavy whipping cream, and season with SPG. Pour the mixture into a large silicone omelet ring on the griddle and cook until nearly set. Fold the omelet into thirds and cut it into two pieces. 5. Place the croissant bread slices on the griddle, toast until lightly browned on both sides, then remove. 6. Braided Salmon: https://blackstoneproducts.com/blogs/recipes/braided-salmon Ingredients For the Salmon 1 large salmon fillet (about 2–2.5 lbs), skin removed and bones pulled 2–3 tbsp Blackstone All-purpose seasoning 1–2 tsp crushed red pepper (optional, for heat) 2 tbsp sesame seeds For the Honey Garlic Butter Glaze 1 stick (½ cup) unsalted butter 2–3 tbsp chopped garlic (fresh or pre-minced) 2–3 tbsp honey Directions 1. Check the salmon fillet for bones and remove any you find. 2. Slice the fillet into three long strips lengthwise, leaving one end connected so it stays together. 3. Braid the strips gently, just like braiding hair, and tuck the end under to secure. 4. In a small saucepan, melt the butter over medium heat, add the garlic, and cook until fragrant, about 1–2 minutes. 5. Stir in the honey until well combined and keep warm. 6. Lightly coat the braided salmon with all-purpose seasoning and sprinkle on crushed red pepper if desired. 7. Preheat a flat top griddle, skillet, or large pan over medium heat. 8. Place the salmon on the cooking surface and cook slowly to keep it tender. 9. Flip carefully after several minutes once the first side has developed color. 10. Sprinkle sesame seeds over the top while cooking. 11. Continue cooking until the salmon is opaque and flakes easily, about 8–12 minutes total depending on thickness. 12. Transfer the cooked salmon to a platter and spoon the honey garlic butter glaze generously over the top. 13. Serve with warm red beans and rice. Preheat the griddle to high heat. Add the ground chicken and season with ½ teaspoon salt and ½ teaspoon pepper. Cook until browned and fully cooked, breaking it into small pieces as it cooks. 2. On the other side of the griddle, set to medium-high heat, add a drizzle of avocado oil. Add the zucchini, cherry tomatoes, red onion, broccoli, and sweet pepper rings. Toss to combine. 3. Pour ½ to ¾ cup of water over the vegetables to create steam and help them tenderize. For faster cooking, cover with a dome if available. 4. Incorporate Cake Mix and Baking Powder. Fold in Chocolate Chunks. Cover with Plastic Wrap and refrigerate 60-90 Minutes. Line Cookie Sheet with Parchment Paper. Combine Flour, Baking Soda, Salt & Baking Powder, whisk well & set aside. Cream together Butter & Sugar. Add Eggs one at a time, Vanilla & Greek Yogurt. Scrape down sides of bowl. Incorporate Flour Mixture in batches. Fold in Cherries. Fill Muffin Liners equally with Batter. Sprinkle lightly with Turbinado Sugar. Bake for 5 Minutes, lower Temperature to 375°F and continue baking until tester comes out clean, 18-20 Minutes. Rest Muffins 2 Minutes in Tin. Cool completely on Wire Rack. Enjoy!

Breakfast Croissant - Eggs, Brie & Bacon (2) Ingredients: 2 Butter Croissants 4 Eggs Salt to taste Pepper to taste 1 tbs Green Onions, chopped 1 tbsp Butter (more melted Butter to brush) 2 cooked Bacon Strips, cut in half 2 Slices of Brie, cut in half Slice Croissants in half lengthwise. Brush with melted Butter. Lightly toast cut Sides. Combine Eggs, Salt, Pepper & Green Onions. Mix well. Melt Butter in small Skillet on med/high. Pour in Egg Mixture, cover with Lid. Scoop out the Flesh and place in a Dish. Mash Avocado with Lemon Juice. Mix in Greek Yogurt (up to 3 tbsp if you like it creamier). Salt & Pepper to taste and Lemon Zest. Slice the tomatoes and season them with Blackstone SPG. Cut the bottom end off the green leaf lettuce and shape the leaves to fit the burger buns. Slice the red onion into thin rounds. 2. Cook blueberries, water, and sweet maple seasoning in a small pot until it turns into a syrup (about 10 minutes). 2. Set the syrup aside and preheat your griddle. 3. Cook bacon on the griddle until crispy, then set it aside. 4. In a pancake dispenser, mix water, pancake mix, and Sweet Maple Seasoning until smooth. 5. Pour batter onto the hot griddle to make pancakes. 6. When bubbles form on top, flip and cook the other side until golden. 7. If you could relive one childhood meal, what would it be? For Hussey, it's Mom’s classic meatloaf: simple, hearty, and full of comfort. Today, he's firing up the pellet grill to bring that memory to life with a smoky twist. Smoked Meatloaf: https://blackstoneproducts.com/blogs/recipes/smoked-meat-loaf Ingredients 2 lbs ground beef (or preferred meat blend) 1 cup panko breadcrumbs 2 eggs 2–3 Tbsp Worcestershire sauce 1 cup whole milk or half & half 1 tsp beef powder 2–3 tsp Blackstone Essentials seasoning ½ cup chopped yellow onion 1 Tbsp Bacon Up (or bacon grease, or other oil) 1–2 tsp garlic paste (or 2 minced garlic cloves) 1 Tbsp BBQ rub ⅓ cup ketchup 3 Tbsp brown sugar 2 Tbsp yellow mustard Splash of Worcestershire sauce Directions 1. Preheat your griddle on low heat and your pellet grill to 350°F. 2. On the griddle, sauté the chopped onions in Bacon Up (or other oil) until soft and translucent. Add garlic paste near the end and cook briefly. Set aside to cool. 3. In a large bowl, mix the ground meat, panko, sautéed onion and garlic, and 1 tsp Blackstone Essentials seasoning. 4. In a separate bowl, whisk together the milk, eggs, Worcestershire sauce, beef powder, and 1 tsp Blackstone Essentials seasoning. 5. Pour the wet mixture into the meat mixture and gently mix until just combined. Avoid overmixing. 6. Line a baking sheet with parchment paper or foil. Transfer the meat mixture to the sheet and shape it into a loaf. Sprinkle with BBQ rub if desired. 7. Place the loaf on the pellet grill and cook for about 30 minutes. 8. While it cooks, prepare the glaze by mixing the ketchup, brown sugar, mustard, and a splash of Worcestershire sauce in a small bowl. 9. When the internal temperature of the meatloaf reaches about 150°F, brush the glaze over the top. 10. Continue cooking until the internal temperature reaches 160–165°F and the glaze is set. 11. Optional: Add a second layer of glaze before slicing. 12. Slice and serve.
