This one started with leftover chicken… and turned into something incredible. Today we’re making Chicken Taquitos — a Mexican-inspired dish that we believe either originated in California or became hugely popular through Tex-Mex cooking. Either way, this was a first for us, and we honestly weren’t prepared for just how good they’d be. We kick things off by making Mexican rice from scratch, something we’ve never done before on the channel. Instead of boiling rice the usual way, we toast it first with onion, spices, and seasoning before adding stock and tomato — a totally new method for us, and one that completely changed the flavour. Then it’s onto the chicken taquitos: Leftover roast chicken, seasoned and mixed with cheese, cream cheese, a little salsa, and (yes…) some spinach — rolled up in corn tortillas and fried until golden and crispy. As Brits, this way of using leftovers is completely different to what we’re used to. Normally, leftover chicken would end up in a sandwich, a pie, or a curry… but rolling it up and frying it until crispy? That’s a whole new world for us — and one we’re very glad we discovered. We served everything up with: 1) Mexican rice 2) Beans 3) Sour cream Fresh salsa Crispy chicken taquitos And honestly… this might be one of our favourite meals we’ve ever made on the channel. 🔥 Would we make it again? Ham Pieces, Cut or Ham Hocks or Jowl Pieces or Bacon Pieces Salt, to Taste ​ ⁨@McCormickVideos⁩ Peppercorn Medley, to Taste 1/4 tsp. Onion Powder, Optional Chopped Green Onion, Optional Making sure to pick out any objectionable beans, place into a large pot and cover with two inches of water. Bring the pot to a rolling boil and let set two minutes before cutting off the heat, covering, and letting the beans soak for one hour in the boiling water. After an hour wait, stain off the water from the beans. Add ham, salt, pepper, and optional onion powder to taste. Use less salt than you think you will need to avoid over salting. Pour in fresh water into the pot, covering about two inches from the top of the beans. Bring to a boil and reduce to a simmer before lidding. Let cook for one to two hours. Different cooks like different doneness levels of the lima beans. It is generally accepted that the lima beans are done when at least a quarter of the beans are empty shells. Most cooks prefer anywhere from a half to three-quarters of the beans to be cooked to empty hulls. This thickens the beans and makes them more like a thick bean soup than a traditional boiled vegetable. Serve in a bowl like you would a thick soup. Generally speaking, chopped green onions and large "cathead" biscuits (usually made with buttermilk) are served on the side for people to eat with their lima beans.

Add a small amount of olive oil to the griddle and cook the sliced onions until caramelized, stirring occasionally. Add a splash of water near the end to help release the natural sugars. Set aside. 3. Spread a generous layer of fig jam over each naan flatbread. 4. Lightly oil the griddle and place the flatbreads over low heat. Sprinkle with mozzarella cheese, cover with a lid or dome, and cook until the cheese is melted and the bottom is lightly crisped. 5. Remove flatbreads from the griddle and top with caramelized onions and chopped bacon. 6. Finish with arugula, prosciutto, crumbled goat cheese, and a drizzle of hot honey or regular honey. 7. Add sliced figs on top if using, then slice each flatbread into four pieces and serve warm. Brownie Mix Cookies Ingredients: 1 box (19.8oz) Brownie Mix 1/4 cup Flour 1/4 tsp Salt 2 Eggs, roomtemp 1 tbsp Milk 1/4 cup Oil 1 cup Reese's Pieces Candies Combine Brownie Mix, Flour, Salt, Eggs, Milk & Oil. Mix well. Fold in Reese's Pieces. Cover & refrigerate a minimum of 30 minutes. Preheat Oven 350°F. Line Cookie Sheet with Parchment Paper. Scoop a tbsp full of Dough & place approx. 2" apart on Cookie Sheet. On a hot Blackstone, he keeps it simple with potato buns, American cheese, pickles, and an easy burger sauce. Stack them double, add the sauce, and enjoy some seriously good burgers. 🍔🔥 Ingredients 1 lb (454 g) 80/20 ground chuck 8 potato rolls or burger buns 8 slices of American cheese 1 tsp kosher salt ½ tsp freshly ground black pepper ½ cup mayonnaise (divided) 8 dill pickle slices (from whole pickles recommended) Smash Burger Sauce (Makes about ¾ cup) ½ cup mayonnaise 1 tbsp spicy brown mustard 2 tbsp ketchup 1 tsp Worcestershire sauce ½ tsp onion powder ½ tsp garlic powder 1–2 tbsp pickle juice or distilled vinegar (to thin) ½ tsp sugar Hot sauce, to taste (optional) Instructions 1. Divide the ground chuck into eight equal portions (about 2 oz / 57 g each). Gently roll into loose balls without compressing. 2. Preheat the Blackstone griddle on medium heat, then increase to high until the surface reaches approximately 450°F. 3. In a small bowl, whisk together all Smash Burger Sauce ingredients until smooth. Refrigerate until ready to use. 4. Spread a thin layer of mayonnaise on the cut sides of each bun. Toast cut-side down on the griddle until golden brown, about 30–60 seconds. Set aside. 6. Place the beef balls on the hot griddle, spacing them at least 3 inches apart. Season evenly with salt and pepper. 7. Cover each ball with parchment paper and press firmly with a burger smasher to form thin patties. 8. Cook for 45–60 seconds, until the edges are deeply browned and crisp. 9. Using a rigid spatula, scrape under each patty and flip. Lightly season and immediately place one slice of cheese on each patty. 10. Stack two patties together to form a double burger. Steak with Garlic Pepper Sauce Ingredients 1 1/2 lbs steak 1 tablespoon butter 5 garlic cloves, minced 1/2 cup beef broth 1/2 cup heavy cream 1 tablespoon Worcester sauce 1 teaspoon fresh cracked pepper Directions Season steak on both sides with salt and pepper. Heat oil in a pan over medium high heat and cook steak (in batches) to preferred doneness. (I used skirt steak or flap meat about 2-3 minutes per side, depending on the thickness). Increase the griddle heat to high. 5. Season one side of each patty with Blackstone SPG. Place the patties seasoned-side down on the griddle, then season the second side. 6. Add the diced onions to a lightly oiled section of the griddle and cook, stirring occasionally, until softened and lightly caramelized. 7. Flip the burgers once the first side is well seared. 8. Spread mayonnaise on the cut sides of the buns. 9. Reduce the griddle heat to medium as the burgers finish cooking. When nearly done, top each burger with one slice of Colby-Jack cheese, one slice of Swiss cheese, and two slices of bacon. Add a small splash of water to the griddle and close the lid for about 1 minute to melt the cheese. 10. Place the buns cut-side down on the griddle and toast until lightly golden. 11. Preheat a griddle with one side set to high heat and the other to medium-low. Place a small pot on the medium-low side and warm the canned chili, stirring occasionally. 2. Divide the ground beef into 4-ounce balls. Place each ball on the hot side of the griddle. Using a burger smasher with a piece of parchment paper between the meat and the smasher, press firmly until flattened, creating crisp, lacy edges. 3. Lightly season each patty with the chili seasoning and Montreal steak seasoning. 4. Add the butter to the griddle, swirling it around the patties to help crisp the edges. 5. In a bowl, prepare the slaw by mixing the broccoli slaw, chipotle aioli, apple cider vinegar, and BBQ sauce. Set aside. 6. Tacos de Asada: https://blackstoneproducts.com/blogs/recipes/tacos-de-asada Ingredients Asada: 2 lbs thin-cut asada meat 2½ tbsp Jugo Maggi Juice of 1 orange Juice of 1 lemon Garlic powder, to taste Blackstone Tequila Lime seasoning, generous amount Black pepper, optional Corn tortillas Salsa Molcajete: 10 tomatillos 10 serrano chiles 4 garlic cloves 1 tbsp Knorr chicken bouillon Small bunch of cilantro, roughly chopped Toppings: Diced white onion Chopped cilantro Lemon wedges Directions 1. In a bowl, combine Jugo Maggi, orange juice, lemon juice, garlic powder, and Tequila Lime seasoning. Mix well, add the asada, and coat evenly. Set aside to marinate while you prepare the salsa. 2. Cinnamon Raisin Bread made with Fresh Milled Flour -1/3 cup/80g warm water -1 teaspoon honey -2 teaspoons/9g yeast **mix and proof for 5 minutes -2/3 cup/100g raisins soaked in hot water for 10 or more minutes, then drain them and set to the side -½ cup/122g warm milk -3 Tablespoons/38 grams melted and cooled butter -3 Tablespoons/33g cane sugar or white sugar -1 egg -1 Tablespoon/9g vital wheat gluten -2 teaspoons/6g salt -300 grams fresh milled hard white wheat flour **Knead 1 minute. -Cover, let mixture hydrate 20 minutes. -Uncover, Knead 5 minutes. -Slowly add drained Raisins, mix into dough one minute. - Cover dough and rest/rise 45-60 minutes. While the dough is rising mix: 5 ½ Tablespoons/44 g sugar, 5 ½ Tablespoons/44g brown sugar, 1 ½ Tablespoons/9g ground cinnamon **Mix - 1 egg beaten -Once the dough has risen, roll into a large rectangle about 10 x18 inches. -Brush the dough with beaten egg, top with sugar cinnamon mixture (be sure to leave about 1 inch perimeter so dough will seal) -Roll up tightly, place in 9x5 greased or lined pan. -Cover with a tea towel, let rise 45-60 minutes, until risen 1 ½-2 inches above side of bread pan. -Bake in a pre-heated 350ºF oven 35-45 minutes (needs an internal temperature of 200ºF).

If using mayonnaise, spread it on one side of each slice of sourdough bread. Melt butter directly on the griddle. 4. Today I am making Old Fashioned Molasses Cookies, and they are beyond delicious 3/4 cup/170g solid shortening (like Crisco) 1 cup/200g cane/white sugar **Cream together for 2 full minutes 1/4 cup/80g molasses (not dark or strong molasses) 1 egg 1 teaspoon vanilla **mix well 1 1/2 tsp./4g cinnamon 1 tsp./3g ground ginger 1/2 tsp./2g ground cloves 1/2 tsp./3g salt **blend 1 tsp./3g baking soda 3/4 tsp./4g baking powder 2 1/4 cups/280g Fresh Milled Soft White Wheat **Mix well, scoop and roll in about 1/4 cup sugar, place in refrigerator to chill at least 1 hour **Bake in a pre-heated 350º oven for 10-11 minutes. Allow the cookies to cool on the pan for 2-3 minutes. Transfer to a cooling rack

Roast Beef Sandwiches: Ingredients 1 loaf French bread (bakery-style) 1 medium onion, sliced Olive oil 12–16 oz Hillshire® ultra-thin roast beef 4–6 slices sharp cheddar cheese Prepared horseradish (to taste) 1–2 cups au jus (store-bought or homemade) Directions 1. Cut the French bread into sandwich-length pieces and slice the onion. 2. Heat the griddle to medium and add a drizzle of olive oil. Place the sliced onions onto the griddle and cook until lightly browned, stirring occasionally. Reduce the heat under the onions to low once they reach your desired color. 3. On a separate burner or camping stove, warm the au jus over low heat and keep it at a gentle simmer. Place the French bread cut-side down on the griddle and press lightly to toast. Ingredients 1 lb ground turkey Blackstone Essential Blend Seasoning ½ cup sliced mushrooms 1 cup diced yellow onion 1 cup sweet potato medley 3 cloves garlic, minced Avocado oil Dairy-free butternut squash ravioli, par-boiled 1 ½ cups coconut milk 1 cup spinach Shredded Belgioioso Parmesan cheese Parsley, for garnish Directions 1. Preheat the griddle on high. Add a drizzle of avocado oil and the ground turkey. Break the turkey apart as it cooks to achieve a finely crumbled texture. Chicken Al Pastor Ingredients 2 lbs chicken thighs For the marinade 1/2 cup canned crushed pineapple 1/3 cup canned pineapple juice (from the same can) 2 chipotle peppers in adobo sauce 1 1/2 tablespoon vinegar 1 1/2 tablespoon sugar 3 tablespoons oil 1 tablespoon chili powder 1 teaspoon paprika 1 teaspoon oregano 1 teaspoon cumin 1 teaspoon garlic powder 2 teaspoons salt 3/4 teaspoon pepper To serve with - tortillas, pico de gallo Optional For the pico de gallo 3-4 Roma tomatoes, diced 1/3 cup diced onions Handful of chopped cilantro Salt to taste Directions Cut chicken into small bite size pieces. In a food processor combine crushed pineapple, pineapple juice, chipotle peppers, vinegar, sugar, oil, chili powder, paprika, oregano, cumin, garlic power, salt and pepper. Blend until smooth. Combined marinade with chicken and let sit for 15 minutes (use this time to make the pico de gallo if desired). Heat skillet between medium high to high heat and add oil. Cook in chicken in 2 batches. Spread half of the chicken pieces all over the bottom of them pan and let it sit for 4 minutes to get a good sear. Then flip over and cook for another 2-3 minutes, stirring occasionally. Remove, set aside and clean pan for the second batch. Repeat the same for the rest of the chicken.
